This dressing comes together in minutes and adds brightness to just about anything — salads, roasted veggies, grain bowls, or wraps. The za'atar adds depth and a hint of earthiness, while the lime and parsley keep it light and vibrant.

Ingredients

  • 1 large avocado

  • 1 large bunch parsley

  • 1 tbsp minced garlic

  • 1 tbsp champagne vinegar

  • 1/2 cup extra virgin olive oil

  • 1 large lime juiced

  • 1 tbsp za'atar

  • 1/2 tsp salt

Instructions

Prep the Ingredients

  • Pit and scoop the avocado.

  • Wash and roughly chop the parsley.

  • Mince the garlic.

  • Juice the lime.

Blend
In a blender or food processor, combine the avocado, parsley, garlic, champagne vinegar, olive oil, lime juice, za’atar, and salt. Blend until smooth and creamy.

Taste & Adjust
Taste and adjust to your preference — add a bit more salt, lime juice, vinegar, or olive oil to tweak the flavor or consistency.

Serve
Serve immediately or refrigerate in an airtight container for up to two weeks. Delicious with roasted cauliflower, fresh crudités, or spooned over grilled vegetables.
